3 vegetables a gastroenterologist eats to protect the liver

Broccoli is especially helpful for those dealing with fatty liver disease. And if broccoli isn’t your thing? Dr. Salhab recommends alternatives like cabbage, kale, or Brussels sprouts, which offer similar benefits.

2. Beetroot
Beets aren’t just colorful salad add-ons; they’re nutritional powerhouses for your liver. According to Dr. Salhab, beets contain betalains—compounds that help reduce oxidative stress and promote liver healing. Whether you roast them, juice them, or toss them into a salad, your liver will be better off for it.

3. Artichokes
This one might surprise you: artichokes aren’t just delicious, they’re also among the best foods for liver health. Rich in an antioxidant called cynarin, artichokes support liver cell regeneration and boost bile production—both essential for breaking down fats and flushing out toxins.
While these vegetables won't replace medical treatments, they can certainly offer your liver the support and strength it needs to function at its best. After all, even the hardest-working organ in the body could use a little motivation to keep going.
